Kauai inspired Nut Milk

A client recently returned from Kauai and was inspired by a dreamy macadamia, coconut, and cashew nut milk she had while on vacation. She reached out when she returned home and gave me the type of assignment I love: to enhance an already delicious recipe! She sent a text asking if I could recreate the tasty memory and signed it with a quick, “love u.”

I’m not anti-dairy, but I am a huge fan of nut milks, often whipping up creamy, nutty concoctions for hungry, depleted new mamas. Nut milks are incredibly nutrient dense with an impressive array of vitamins and minerals as well as iron, magnesium, zinc, selenium, even fiber. A couple of my favorite decadent nut milks have a starring role in our new book, The First 40 Days (think: chocolate hazelnut, cashew chia, and almond black sesame).

To boost the nutrient levels of my client’s tropical milk, I left the toothsome bits of the soft macadamia and cashew nuts in the milk—I love having something to chew on, makes the experience more of a decadent snack than a drink—and upped the yummy factor with a couple drops of vanilla extract and a pinch of sea salt (this is the secret to a balanced, deeply satisfying creamy nut milk!).

You don’t need any special equipment to make this satisfying treat at home. I even skipped the nut milk bag!
